Onion Soup Potatoes

This is such a ridiculously easy recipe for a side dish that I wish I had thought of it first.  Alas, my brother and his wife taught me this recipe when we were recently on vacation.   And while I don’t generally like to use packaged foods, the occasional onion soup mix doesn’t hurt.  And it really does make for a surprisingly delicious dish.

Ingredients:

1 package Onion Soup Mix

1 pound baby potatoes, cut in halves

a drizzle of olive oil

Directions:

  • Preheat oven to 450 degrees
  • toss onion soup mix, olive oil, and potatoes in a baking dish
  • roast for 30 minutes or until potatoes are fully cooked – stirring once about half way through
