Rachael Ray’s original recipe (found here) is pretty perfect, so I’m not going to bother retyping the whole thing here. I am, however, going to mention that it seriously needs spices. I use taco seasoning or a combination of cumin, paprika, chili powder and cayenne, but you could use whatever you want. And feel free to add additional vegetables as you like – if I have extra fresh tomatoes that need to be used, I’ll add them. Same with bell peppers. And of course, you can make it the night before and just pop it in the oven when you get home from work. Just make sure to increase the cooking time a little since it will be going into the oven cold.
