So when I get really desperate for a quick meal, I have been known to empty out a bottle of our favorite BBQ sauce (we really like Trader Joe’s) on top of some chicken breasts and set it to low in the slow cooker. Before serving I’ll pull apart the chicken and maybe add another dash of BBQ sauce. It is actually pretty good. But it probably isn’t the healthiest or the tastiest way to enjoy pulled chicken in the slow cooker. So I’m going to try this recipe out instead. I’ll let you know how it turns out. 6 boneless, skinless, chicken breasts
1 red onion, chopped
3 cloves garlic, finely chopped
8 oz. crushed tomatoes
2 TBSP tomato paste
¼ cup brown sugar
¼ cup molasses
4 TBSP lemon juice
Salt and Pepper, to taste
Buns, sliced tomatoes, onions, and any other toppings for sandwiches
- Place chicken breasts and onions in slow cooker.
- Mix all remaining ingredients in a bowl. Pour over chicken.
- Cook on high 4 hours or low 7-8. Before serving, pull the chicken apart with a fork and mix well.
- Serve on sandwich buns and with a side of slow cooker baked potatoes.
