Did you know you can make “baked” potatoes in the slow cooker??? I can’t believe it took me this long to discover this – but I am so happy I did. This is going to be perfect this summer when we want to grill and need an easy side dish. I like to top mine with some reduced fat sour cream and a fruity salsa (like mango or peach) but of course, feel free to top them with whatever you like!
Ingredients:
4-6 baking potatoes (I usually buy russets)
Directions:
- Wash potatoes well and rub dry with a towel.
- Prick several holes in each potato. Wrap each potato in aluminum foil.
- Place in slow cooker. Cook on low 7-8 hours.
- Top with reduced fat sour cream, cheese, chives, salsa, etc.
