This is a variation of the pork tenderloin and black beans that you may have seen on here before. Still very easy, very yummy, and I like to serve it over rice. I’ve recently started to really like pork tenderloins – they’re surprisingly lean, go well with just about anything (try roasting it with mustard or with apples), cook quickly, and are just a nice change of pace from all the chicken and turkey.
Ingredients
1 pork tenderloin
1 jar mango salsa (we’re using Wegman’s Peach and Mango salsa)
2 TBSP jerk seasoning
1 can black beans, drained
1/2 cup chopped cilantro
salt and pepper to taste
Directions
- Add all ingredients, except cilantro, to slow cooker
- Cook on low for 4 hours, or on high for 8
- Before serving, pull pork apart with a fork and add the cilantro. Adjust seasoning if necessary
- Serve over rice
