Slow Cooker Chicken Cacciatore

This is really easy and you can take as many short cuts as you’d like – use jarred spaghetti sauce, roasted red peppers, pre-sliced mushrooms.  It is easy and makes the house smell good – which is a great thing when you come home from work, tired and hungry.

Ingredients

4-6 chicken breasts, cut into large chunks

1 jar spaghetti sauce (OR 28 oz of crushed tomatoes, seasoned with garlic powder, oregano, and whatever spices you prefer)

1 red pepper, sliced

1 (8 oz.) package of mushrooms – button or bellas, sliced

1 onion, sliced

2-3 cloves garlic, diced

1/2 cup shredded parmesan cheese

salt and pepper to taste

1 box of spaghetti – prepared per instructions on box

Directions

  • Place chicken, pepper, mushrooms, onion, garlic and parmesan in slow cooker
  • Pour tomato/spaghetti sauce overtop, making sure it completely covers everything else
  • Cook on low for 8 hours, add salt and pepper and additional seasoning as needed
  • Serve over spaghetti with more parmesan
